Meanwhile, the cream is cooling, prepare the pastry , wrap in plastic wrap and let rest in refrigerator for about 30 minutes.
Prepare the caramel to make the flames of the candles. Pour sugar into a saucepan and let it go on high heat stirring constantly with a wooden spoon. When sugar begins to crystallize, reduce heat and continue stirring. The sugar will begin to darken, at this point moved to and from the saucepan from the flame until it is completely melted.
Take a bit of caramel from the pan with the spoon and drop a few drops on wax paper trying to write a form that is as close as possible to a flame ( is important that the wax paper is stopped, I have attached with tape to the work ). Before the caramel harden enter a toothpick in the flame.
Take the pastry from refrigerator, spread in a layer not too thin, cut into strips of various sizes depending on how high you want your candles and wrap around the cannoli molds greased and floured ( I used those of Decorate ). Tightly recap the end otherwise you will open during cooking.
candles Brush pastry with melted butter and dip in chopped hazelnuts.
Place on a baking sheet coated with parchment paper and bake at 180 degrees for about 15-20 minutes. Once cooked, immediately remove the candles from the molds.
When the candles have completely cooled, fill with pastry cream with the help of a syringe or a spoon and place them on a platter as standing. The cream will be the glue on the plate:)
Place each candle on the flames of caramel and garnish the dish to taste. I used leaves and flowers made of fondant icing Decorate .
One more thing .... did you remember to look at the sun this morning? This picture is what you could see from the sky of power, unfortunately covered with clouds for the duration of the eclipse: (too bad, especially because the sun is out now!
